Here we have a quick and delicious Moroccan Couscous Salad for your next family lunch. 🥬🥙

Ingredients:

- Fresh veggies (bell peppers, carrots, onion,zucchini and garlic)
- Fresh cilantro and mint
- Spices (turmeric, cumin, cinnamon and coriander)
- Lemon juice
- Liviana olive oil
- Veg broth
- 1 can chickpeas
- Raisins
- Couscous (ready made)

Step-by-step:

1. Preheat oven to 250°C and grease baking sheet.
2. Add veggies, drizzle with oil and season.
3. Roast until tender, about 15 minutes.
4. Whisk olive oil, lemon, garlic and most spices.
5. Bring broth and turmeric to a boil.
6. Pour hot broth over couscous and raisins in a bowl and toss.
7. Cover and rest for 5 minutes.
8. Add roasted vegetables, chickpeas,
cilantro, mint and lemon mixture, toss and enjoy!

A quick and yummy lazy-day snack idea: Potato skin chips. 😋✨

Ingredients:

- peelings from 2 potatoes
- 2 tsp Liviana EVOO
- pinch of sea salt or seasoning of choice

Step-by-step:

1. Preheat oven to 180 °C.
2. Line a rimmed baking sheet with parchment paper or foil.
3. Gently toss the peelings with olive oil and place in a single layer on the baking sheet.
4. Sprinkle with salt or seasoning of choice and bake for 15-20 minutes or until golden and crispy.

Serve with dip of choice and enjoy! 😊

Once you make this, you’ll never toss those peelings out again. Never mind the fact that they are packed with up to 80% more vitamins than the potato itself, too.
