Our Liviana Estate Select extra virgin olive oil helps balance the natural sweetness of the carrots to give you a delicious, healthy hummus.
- 400 g carrots
- 2 cloves garlic
- 2 Tbsp Liviana Estate Select extra virgin olive oil
- 2 Tbsp tahini
- 60 mL freshly squeezed lemon juice
- A pinch Himalayan pink sea salt
This naturally sweet dip will have you snacking all day. If you like that extra bite sprinkle some dried chili flakes on top, we also added some sunflower seeds for a more crunchy texture.
Step by Step Instructions
Preheat the oven to 180°C.
Chop the carrots into medium sized rounds.
Place the carrots and garlic cloves onto a baking sheet, drizzle with Liviana Estate Select extra virgin olive oil.
Roast the carrots in the oven for about 15 minutes until the carrots are soft.
Add the roasted carrots, tahini, lemon juice and salt to a food processor.
Process until you have a smooth, thick consistency, about 1-2 minutes.
Pour the hummus out into a serving bowl and drizzle with some extra Liviana Estate Select extra virgin olive oil.
Serve immediately or store in an air-tight container for up to 4 days.
