Ingredients

  • 1 medium cauliflower, florets
  • 1 tin chickpeas
  • 2 tbsp Liviana® Extra Virgin Olive Oil
  • 5 sprigs fresh thyme
  • Salt and pepper
  • 10 cherry tomatoes, halved
  • ½ cup red quinoa, cooked
  • 1 lemon

Method

  1. Add the cauliflower, chickpeas, Liviana® Extra Virgin Olive Oil and fresh thyme onto a baking tray. Season generously with salt and pepper.
  2. Place in the oven for 30 minutes on 180°C or in the Airfryer for 30 minutes at 140°C.
  3. Serve with fresh cherry tomatoes, red quinoa and good squeeze of lemon juice.
