Creamy Tuscan Chicken Meatballs
In need of some comfort in this cool weather? Creamy dishes can easily be very energy dense, and sometimes making easy swops, like using plain yoghurt instead of cream, and relying on great fresh produce improves the nutritional density of meals. Remeber to always keep experimenting with fresh produce. A small herb garden will mean that you have fresh herbs at hand for every meal. Cannot imagine cooking without these little flavour and fibre friends!
Ingredients
- ¼ cup fresh basil
- ¼ cup fresh flat leaf parsley
- 1 cup baby spinach
- ¼ red onion
- 8 cloves Liviana® Black Garlic
- 1 lemon, zest and juice
- 1 tsp Liviana® Wild Blossom Honey Infused with Bird's Eye Chilli
- 2 cups chicken mince
- Salt and Pepper
- 1 tbsp Liviana® Extra Virgin Olive Oil
- 1 cup plain yoghurt
Method
- Finely chop the fresh herbs, spinach, onion and Liviana® Black Garlic.
- Add to a mixing bowl and combine with lemon zest, juice, Liviana® Wild Blossom Honey Infused with Bird's Eye Chilli and chicken mince. Season generously with salt and pepper.
- Add the Liviana® Extra Virgin Olive Oil to a hot frying pan. Spoon heaped tablespoon scoops of the mince mixture into the pan. Fry on one side until charred and then flip gently.
- After the meatballs have cooked on both sides, add a ½ cup of water to the pan and close with a lid. Let the meatballs steam over a low heat for 3-5 minutes.
- Add the plain yoghurt and gently swirl in the pan with the meatballs until a sauce forms.
- Serve with whole-wheat pasta or brown rice as the perfect comfort food.
