Flax, Almond and Cocoa Flapjacks

Ingredients
- 2 tbsp flaxseeds
- 2 tbsp almonds
- 2 tbsp cocoa powder
- Pinch of salt
- 1 tsp vanilla extract
- 1 tbsp Liviana® Extra Virgin Olive Oil
- 2 tbsp Liviana® Honey
- 3 eggs
- 1 tsp baking powder

Method
- Place the flaxseeds, almonds and salt into a blender and blend until flour has formed.
- Add the flaxseed and almond flour to a mixing bowl, add the rest of the ingredients and combine with a spatula.
- Spoon 2 tablespoons of dough onto a non-stick pan over medium heat. Cook on one side until small bubbles appear and start to burst. Flip over onto the other side and cook for 1-2 minutes until the centre starts to bulge slightly. Remove from the heat.
