Ingredients
- ½ cup fresh herbs (basil, flat leaf parsley, spring onion, coriander, mint)
- 1 tsp Liviana® Extra Virgin Olive Oil
- 2 eggs
- Salt and pepper
- 2 tbsp milk (can be replaced with any milk alternative)
- 2-5 pieces Liviana® Pickled Jalapeños (the more pieces the spicier)
- 2 tbsp mozzarella cheese, grated
Method
- Add all of the ingredients into a blender and blend until combined or use a stick blender.
- Drizzle some Liviana® Extra Virgin Olive Oil onto a non-stick pan. Add the mixture to the pan and fry over a medium heat for 3-5 minutes. Do not stir or flip the omelette. If the top does not firm up, cover loosely with a large heat proof lid for a couple of minutes.
- Gently flip onto a plate and add the grated cheese
- Enjoy!
