Minty Hempheart Peas
Peas are very widely consumed and a much-loved legume. Very seldom you will find peas on the center stage of the dinner table, because elevating it to something extraordinary and healthy might be somewhat unfamiliar. Mint and peas are a match made in heaven and a very traditional pairing, but have you ever tried it? It is delicious, and we can guarantee that you will love it! A simple side with smashing flavours.
Ingredients
- 2 cups peas (fresh or frozen)
- 1 cup fresh mint leaves
- 2 tbsp Liviana® Extra Virgin Olive Oil
- 1 tsp Liviana® Honey
- 1 tbsp lemon juice
- 1 tbsp Liviana® Extra Virgin Olive Oil
- 1 tbsp apple cider vinegar
Sauce
- 1 tbsp Liviana® Honey
- 1 tbsp wholegrain mustard
- 3 sprigs thyme
- 2 tbsp apple cider vinegar
- 1 tsp soy sauce
- 1 tsp cumin, ground
- 1 tsp coriander, ground
- 1 tsp salt
Method
- Prepare the peas (fresh or frozen) according to the packaging instructions.
- Finely chop the fresh mint, place in a small mixing bowl, add the rest of the ingredients, and combine. Season generously with salt and pepper.
- Place the peas in a serving dish and spoon the mint pesto over the top. To prevent the peas from turing brown, do not add the mint pesto to the peas in advance, only add it when it is ready to be served.
- Enjoy as the perfect cooling summer side.
