Ingredients

  • 2 cups peas (fresh or frozen)
  • 1 cup fresh mint leaves
  • 2 tbsp Liviana® CBD-Infused Extra Virgin Olive Oil
  • 1 tsp Liviana® CBD-Infused Honey
  • 1 tbsp lemon juice
  • 1 tbsp Liviana® CBD-Infused Extra Virgin Olive Oil
  • 1 tbsp apple cider vinegar

Sauce

  • 1 tbsp Liviana® CBD-Infused Honey
  • 1 tbsp wholegrain mustard
  • 3 sprigs thyme
  • 2 tbsp apple cider vinegar
  • 1 tsp soy sauce
  • 1 tsp cumin, ground
  • 1 tsp coriander, ground
  • 1 tsp salt

Method

  1. Prepare the peas (fresh or frozen) according to the packaging instructions.
  2. Finely chop the fresh mint, place in a small mixing bowl, add the rest of the ingredients, and combine. Season generously with salt and pepper.
  3. Place the peas in a serving dish and spoon the mint pesto over the top. To prevent the peas from turing brown, do not add the mint pesto to the peas in advance, only add it when it is ready to be served.
  4. Enjoy as the perfect cooling summer side.
