Ingredients

  • 1 cup brown and wild rice
  • ½ cup lentils
  • 3 cups vegetable stock
  • 1 tbsp psyllium husk 
  • 3 chicken breasts, cut into 1cm cubes
  • 2 red onions
  • 1 cup cherry tomatoes
  • 1 garlic bulb, halved lengthwise
  • 4 cloves Liviana® Black Garlic
  • 2 tbsp Liviana® CBD-Infused Extra Virgin Olive Oil 
  • 1 tsp cumin, ground
  • 1 tsp coriander, ground
  • 2 tsp salt
  • 1 tsp pepper
  • Handful of fresh herbs
  • Lemon wedge
  • ½ cup feta cheese (optional)

Method

  1. Combine all the ingredients in an oven proof dish and cover with foil.
  2. Bake for 35 minutes at 180°C in an oven or 170°C in an airfryer. Uncover and bake for a further 20 minutes at the same temperature. 
  3. Serve with some fresh herbs and a lemon wedge.
