Mediterranean Chicken, Brown Rice and Veg Bake
Savour the flavours of the Mediterranean with this easy, wholesome one-dish dinner. This Mediterranean chicken, rice, lentil, and veggie dish is a delicious and nutritious meal that's simple to prepare, leaves you with minimal cleaning up, and will satisfy your taste buds. All you need is a reason not to do dishes, a hungry family and the motivation to feed them something nutritious.
Ingredients
- 1 cup brown and wild rice
- ½ cup lentils
- 3 cups vegetable stock
- 1 tbsp psyllium husk
- 3 chicken breasts, cut into 1cm cubes
- 2 red onions
- 1 cup cherry tomatoes
- 1 garlic bulb, halved lengthwise
- 4 cloves Liviana® Black Garlic
- 2 tbsp Liviana® Extra Virgin Olive Oil
- 1 tsp cumin, ground
- 1 tsp coriander, ground
- 2 tsp salt
- 1 tsp pepper
- Handful of fresh herbs
- Lemon wedge
- ½ cup feta cheese (optional)
Method
- Combine all the ingredients in an oven proof dish and cover with foil.
- Bake for 35 minutes at 180°C in an oven or 170°C in an airfryer. Uncover and bake for a further 20 minutes at the same temperature.
- Serve with some fresh herbs and a lemon wedge.
