Grilled Beetroot and Feta Salad

Ingredients
- 1 kg beetroot, julienned
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- ½ tbsp Liviana® Alfafa Blossom Honey
- ½ cup plain feta cheese
- ¼ cup micro greens for garnish
- 2 tbsp Liviana® Extra Virgin Olive Oil
Method
- Pre-heat oven to 200°C.
- Place the beetroot, Liviana® Alfafa Blossom Honey, balsamic vinegar, salt and pepper into a mixing bowl. Mix with a wooden spoon until the beetroot is evenly covered.
- Place the beetroot onto a baking tray and spread out into one layer.
- Bake in the oven for 35 – 40 minutes until tender. Stir every 10 minutes.
- Place onto a serving dish. Garnish with micro greens and feta cheese. Garnish with micro greens, feta cheese, and a generous drizzle of Liviana® Extra Virgin Olive Oil.
